Itinerary of Oil

Food trends of the last years show an increase in the use of high nutritive-value products such as the extra virgin olive-oil with its natural high-quality. Just 24 hours from the harvest to the pressing: the most informed oil consumers know that the faster the olives are brought to the mill for the pressing the better quality of the fruit is kept with a low acidity of the oil obtained. The extra virgin olive-oil produced by following these golden rules can be advised to sportsmen, to pregnant women, to children and to elders. Its antioxidising properties contribute to fight cellular ageing and to reduce LDL colesterol. The DOP (protected denomination of origin) oil production in the Tuscia territory is mainly concentrated in the geographical area of Viterbo - Canino - Tuscania. In the year 2001 some mills praticed the cold squeezing by means of highly-technological machines.
Tasting time is November and December.
